
🧺 Ingredients:
🥩 For the Meatloaf:
- 2 lbs (900g) ground beef (80/20 or 85/15 is ideal)
- 1 cup (60g) breadcrumbs (plain or Italian-style)
- ½ cup (120ml) whole milk
- 2 large eggs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp chopped fresh parsley (or 1 tsp dried)
- 2 tbsp Worcestershire sauce
- 1 tsp salt
- ½ tsp ground black pepper
- 1 tsp dried thyme (optional)
- ½ tsp smoked paprika (optional, for depth of flavor)
🍅 For the Glaze:
- ½ cup (120ml) ketchup
- 2 tbsp brown sugar
- 1 tbsp apple cider vinegar or white vinegar
- 1 tsp mustard (yellow or Dijon, optional)
🧑🍳 Instructions:
🔹 Step 1: Preheat and Prepare
- Preheat oven to 375°F (190°C).
- Line a baking sheet with foil or parchment, or use a loaf pan. Lightly grease it.
🔹 Step 2: Soften the Breadcrumbs
- In a large mixing bowl, combine breadcrumbs and milk.
- Let them soak for 5 minutes — this makes the meatloaf moist.
🔹 Step 3: Add Remaining Meatloaf Ingredients
- To the breadcrumb mixture, add:
- Ground beef
- Eggs
- Chopped onion
- Garlic
- Parsley
- Worcestershire sauce
- Salt, pepper, thyme, paprika
- Mix everything gently with clean hands or a spatula until just combined.
- Don’t overmix or your meatloaf will be tough.
🔹 Step 4: Shape the Meatloaf
- Transfer the mixture to your baking sheet or loaf pan.
- Shape it into a loaf about 8″ long by 4″ wide.
- Smooth the top and edges.
🔹 Step 5: Make the Glaze
- In a small bowl, mix together ketchup, brown sugar, vinegar, and mustard.
- Spread half the glaze evenly over the top of the meatloaf before baking.
🔹 Step 6: Bake
- Bake in the preheated oven for 40 minutes.
- Remove, brush with the remaining glaze, and return to oven.
- Bake for another 15–25 minutes, or until:
- The internal temperature reaches 160°F (71°C)
- The glaze is caramelized and sticky
🔹 Step 7: Rest and Serve
- Let the meatloaf rest for 10 minutes before slicing.
- Slice with a sharp knife and serve warm.
